Why there is no GUILD specification in the character info?

Guild is a private matter in this world, there are many rouge guild they use there ranking to slither and get all the resources of the lower rank guild. Guild is the one who will choose you, when you reach level 20, two or more of the guild will notify you to join them. They also choose you by your JIN, but all of that matters with your decision you can go solitary also.

Can I create my guild?

Yes you can you just need 100 Gyules and 9 members of it.
